Arroz a la Valenciana, or Valenciana rice, is a kissing cousin to Spanish Paella which also comes from Valenciana. Versions have grown in different parts of countries like Central And South America, Portugal,Chile and in Asian Philippines.
Here are the ingredients:
sticky rice (malagkit)
chicken parts (liver, breast, etc..)
medium sized squid
shrimps
tahong
red bell pepper
a can of green peas
raisins
onions, sliced thin
crushed garlic
chicken/quail eggs, boiled and shell removed
salt and pepper to taste
luyang dilaw,shredded
chorizo de bilbao
gata (5 glasses per kilo of malagkit
Directions:
1. Saute crushed garlic, onion and chicken parts.Add luyang dilaw then pour 1/2 cup water and simmer to soften the meat. Once meat is fully cooked and juice completely dries, add chorizo de bilbao, shrimp, red bell pepper, green peas and raisins. Season with salt and pepper.
2. Add rice and gata. Bring to boil until malagkit rice is cooked with the sauteed ingredients. Mix well, cover wok with banana leaves and simmer in low heat until rice is completely cooked.
3. Garnish with quail eggs,green onions and remaining sea food ingredients.
Serve and enjoy.
