I had my first experience in authentic Thai food when I got the chance to have a short vacation in Bangkok last December 2016.
Honestly I was quite hesitant for I never had Thai food and I do not know what to order. Somehow, I do have an idea that Thai cuisine is spicy which is a good thing for me because I love and enjoy spicy food.
But I have to admit, the spiciness level is more than what I expected and most of the street foods in Bangkok that I dared to try are nothing like I have eaten before. Yes, I convinced my self to eat fried scorpions and tarantulas as well. One thing is for sure, I have found my comfort food in this array of exotic Thai street foods, it was the stir fried noodles with chicken and vegetables famously known as Pad Thai.

This pad thai recipe tastes similar to the Thai street style version and is very easy to prepare! Why bother to take out when you can make your own at home?
1 pack (400 grams) of rice noodles
1 part chicken breasts cut into 1/2 inch pieces
1 cup bean sprouts (togue)
tofu/tokwa cut into into bite sized cubes (optional)
1/4 cup green onions cut into 1 inch pieces
red chillies/ siling labuyo
1/4 cup roasted salted peanuts chopped
lemon wedges
1 tablespoon vegetable oil
1 teaspoon minced garlic
salt and pepper to taste
2 eggs
For the sauce:
2 tablespoons fish sauce
2 tablespoons brown sugar
A small pack of oyster sauce
Here is how to prepare:
In a medium bowl, whisk together oyster sauce, fish sauce and brown sugar. Set aside.
Heat the oil in a large pan over medium high heat. Add the chicken to the pan and season with salt and pepper to taste. Cook for 5-6 minutes, stirring occasionally, until chicken is browned and cooked through.
You may add tofu/tokwa if you desire. Stir fry tofu/tokwa together with chicken until browned.

Add the garlic to the pan and cook for 30 seconds.
Move the chicken mixture to one side of the pan and add the eggs to the empty side of the pan. Stir the eggs until scrambled and cooked through, approximately 3 minutes.
Prepare rice noodles according to package directions. Do not overcook the rice noodles for the cooking process will continue when you stir-fry it with the other ingredients.
Add the rice noodles and sauce to the pan, toss to coat evenly.
Stir in the green onions and bean sprouts.
Sprinkle the peanuts and red chillies over the noodle mixture. You may add cooked shrimps (optional) on top. Serve garnished with lime/lemon wedges.
